If you wish to create restaurant quality foot at home, you will need to need to use the similar techniques, and this also usually means using similar equipment. Many people who look closely at a professional kitchen for the first time are surprised that the frying pans used in them are usually quite different from the ones usually used at home. There are, in fact two types of frypan that are used, depending on what you are frying. The lyonnaise frypan shown here is the most widespread frypan for frying meat or fish, or sauteeing eg potatoes (the other type of frying pan is a stainless steel version, which is particularly useful when making a sauce after "browning/sealing" meat). Why do you not offer a range of sizes?
Although the picture above shows various sizes, by far the most popular size for professional kistchens is the 28cm diameter pan. This is large enough without being too heavy.

Will this pan really last a lifetime?
Domestic frying pans are usually sold with a telfon-style non-stick coating. As we all know, after realtively short time, the non-stick coating starts to come off, and the pan must then be replaced. Restaurants need frypans that are robust, have the very good non-stick qualities and can be put into the oven (hence no plastic handle). The secret of retaurant frying pans is that professional chefs treat their frypans like Wok pans, and the more used they become, the better they become. When used, you just wipe them clean with a tissue or cloth. Generally, no soap or water is used to clean these frypans. If necessary, you can sprinkle some table salt into the pan before wiping to enhance the abrasion effect. Treated in this way, our carbon-plus pan will last a lifetime, and will maintain their unparallelled non-stick qualities.

What makes this a special Frying Pan?
This pan comes from de Buyer's top-of-the-range Carbone-Plus professional range which means the pan has a 3mm thickness. This means not only will the pan not distort in shape (unlike cheaper pans), but it also conducts more uniformly and will not cool down when ingredients are added. If you put this pan of a very high heat it will stand up to it (not something you should do with a domestic coated non-stick pan).

What can I cook with this pan?
This pan is used for SEALING, FRYING, BROWNING and is perfect for both meat, fish and vegetables. If you ask for a Steak in a French restaurant, this is more than likeluy the pan it will be cooked in.
